Today was such a great day at our house. Olivia enjoyed her second Easter today. Yesterday we prepared for the festivities with some egg dying. We just used the traditional Paas coloring kit that Pete and I used when we were growing up. We have plenty of time to get fancy when she's older.
Today both grandmas came over for brunch (oh so good!). We served
Monte Cristo Waffles inspired by a Rachel Ray recipe. I added powdered sugar and raspberry preserves to make it more like the one they used to serve at Bennigan's. I served them up with a mixed green salad with strawberries and the yummy Sweet Basil Olive Oil and Strawberry Balsamic Vinegar I found at
Di Olivas on my women's retreat last weekend in St. Charles, MO. My mom brought baked apples and Pete's mom brought a peach cobbler.

After brunch, we got Olivia dressed in her fancy Easter dress and let her play with her Easter basket for a little bit. She loved shaking her plastic eggs. They were filled with yogurt melts, Little People, and Topzy Tumblers. Eventually she squished an egg and it opened, spilling yogurt melts. She was surprised and so excited. She spent quite a while cracking open eggs and eating her treats.
Eventually we made it outside for a good old fashioned Easter egg hunt with the eggs we had dyed. Pete hid the eggs ALL OVER the yard. We wound up having to move them a little closer together because it's still hard for Baby O to walk in the grass. She enjoyed putting the eggs in the basket and then taking them out again.
I had good intentions to make egg salad and deviled eggs with the dyed eggs after the hunt. But because Olivia enjoyed throwing the eggs in the basket so much, she made her own egg salad in her Easter basket, complete with shells, grass, and dirt. So, they eventually wound up in the trash.
Great Easter. The weather was perfect. I'll post later when Olivia discovers the chocolate bunny in her Easter basket. That's sure to be a winner!
